How to cook Kenkey

In a previous posts, we highlighted Fufu one of the staple foods across Africa and very popular in Ghana, made primarily from plantain and/or yam flour. Another African staple food used as a side dish is Kenkey. The primary difference between Kenkey and Fufu is that Kenkey is made with corn flour and requires fermentation in order to create its unique flavor and Kenkey is somewhat similar to a tamale while Fufu is similar to mashed potatoes or dumpling. Fermenting Kenkey can take few days thus extending the cooking/preparation time as compared to Fufu. So definitely plan ahead if you want to serve-up with your meal; the video notes the fermentation processs.  The last time I had Kenkey it was served-up with a whole fried tilapia with fresh homemade salsa. I have been so spoiled by my Ghanian friends. I have been able to share my findings with them and they are exceited to see how popular African food has become and the amount of products that are now available for purchase. Very cool. I've really never been exposed to African Cuisine. I'm going to have to give it a go.
